LECITHIN

I add one tablespoon of lecithin and one tablespoon of oil for a one loaf recipe.  I had originally just used two tablespoons of oil before learning about lecithin, but I've found that the bread will stay fresher and moister for about a day or two longer if lecithin is used.

You can make your bread completely oil (and lecithin) free if you desire.  Its keeping quality will be much shorter, and after the first 24 hours after baking, will be a bit more dry.

Using a tablespoon each of lecithin and oil, my bread keeps about 5 days at room temperature.
